RECIPE: Grounding Vegan Almond Oatmeal Chocolate Chip Cookies

There’s no eggs so you can totally eat the raw cookie dough like when you were little, but without the risk of a tummy ache.

Instructions

Preheat oven to 350 F

Dry Ingredients

  • 3/4 cup old fashioned rolled oats (certified gluten free)

  • 3/4 cup oat flour

  • 1/2 tsp Kosher salt

  • 1/2 tsp cinnamon

  • 1/2 tsp baking soda

Egg substitute (let this mixture sit for approx 5 minutes)

  • 1 tbsp chia seeds 

  • 3 tbsp warm water

Wet ingredients

  • 3/4 cup creamy natural almond butter 

  • 1/2 cup maple syrup

  • 1 tsp vanilla extract

  • 1 tsp almond essence

Mix dry ingredients with wet ingredients 

Add in

  • 1/4-1/2 cup chocolate chips

Bake for 12 minutes 

Eat slowly and enjoy every single bite.
